Seats are finite, and Canadian evenings collide with Europe's late night, so cheap blackjack fills first. Bet behind stakes a seated player's hand while they make every choice. Unlimited-seat formats deal one hand to the room and let each of you play your own copy. Side bets carry a far heavier edge than the hand itself, so a round costs your stake plus every box you've ticked.
Roulette teaches itself; baccarat asks almost nothing.
Roulette is quick to learn and impossible to improve at. Every bet on a single-zero cloth carries the same margin, and no run of reds shapes the next spin.
